This post may be out of season, but better late than never. Texas will likely see more pool days before the weather turns chilly. One day soon we will have pool parties, and this is the post you will need to come back to when the timing is right.
This fall I will experiment with holiday-themed jello shots and come back here to update this post. I'm thinking of Fireball, Pumpkin Pie, Apple Cider, Cranberry!
I always thought jello shots were complicated, and I was pleasantly surprised once I started experimenting with them how easy they are to make.
Helpful tips
I found it easier to transfer the liquid to a measuring cup with a spout and pour it into the individual 2oz souffle cups. You may cap your souffle cups, or wait until the gelatin has set before adding the tops.
I assemble these on a large baking sheet and move the baking sheets, stacking one on top of the other in the refrigerator.
Hurricane Jello Shots
1 Box Orange Jello (3 oz)
1 cup fruit juice (look for Tropical or Passion)
1/2 cup white rum
1/2 cup dark rum
2 tablespoons grenadine
In a small saucepan, bring fruit juice to a boil and add orange jello, stirring with a whisk to dissolve completely.
Remove from heat and add rums and grenadine.
Fill the individual 2-ounce souffle cups and refrigerate to set, approximately 2 hours.
Margarita Jello Shots
1 Box Lime Jello (3 oz)
1/2 cup water
1/2 cup orange juice
1 lime, juiced
3/4 cup Tequila
1/4 cup Grand Marnier (or Cointreau)
Coarse salt
In a small saucepan, bring 1/2 cup water and 1/2 cup orange juice to a boil and add lime gelatin, stirring with a whisk to dissolve completely.
Remove from heat and add the juice of one lime, 3/4 cup tequila, and 1/4 cup Grand Marnier.
Fill the individual 2-ounce souffle cups and refrigerate to set, approximately 2 hours.
I sprinkled coarse grey salt on the jello after they set, but I found the salt dissolved into the jello, making it salty - which some people liked. Next time, I will leave it off and offer a salt shaker next to the jello shots if someone wants to add a sprinkle of salt on top.
